
It is very challenging to feed my son, who has celiac disease. I’ve tried so many gluten-free foods, but he is very picky and often won’t eat them. When I finally make something he truly likes, I’m thrilled. This is a great recipe that the whole family loves. It’s perfect for a morning snack and incredibly delicious. I often make several and freeze them—if there’s any left to freeze!
Flour Blend (1½ cups total)
- ¾ cup oat flour
- ⅜ cup tapioca starch (6 tbsp)
- 3 tbsp almond flour
- 3 tbsp buckwheat flour
Waffle ingredients:
- Flour blend
- 2 tsp baking powder
- ¼ tsp salt
- ¼ cup maple syrup
- 2 eggs
- 1 cup milk
- ¼ cup oil or melted butter
- 1½ tsp vanilla
➡ Rest batter 10–15 minutes, cook until deep golden.
These waffles come out golden and crisp, with a soft, tender center. They don’t have the dense or crumbly texture that gluten-free baked goods sometimes do, and they reheat beautifully.
